Pantry Staple: Vinegar


My dad calls it "douche" because he thinks he knows what "douche" tastes like. Vinegar is another one of my absolute favorite things in the kitchen. It's so tangy and adds a ton of calorie-free flavor to foods.

Great for the kitch: Red wine and balsamic vinegar are the most popular vinegars in the US. I always have red wine vinegar because it's my absolute fav and I think it has the strongest flavor. Balsamic turns super sweet when it's cooked down - makes an a-mazing sauce over chicken. There's cider vinegar, sherry vinegar, white wine vinegar, white distilled vinegar, rice vinegar, and probably a lot more. As with most things, good quality vinegar results in good quality flavor. But I'm pretty guilty of buying the cheap stuff and it still works. Mix red wine vinegar with some olive oil, garlic, and Dijon mustard for an outstanding salad dressing. Put rice wine vinegar over glass noodles with some sesame oil and sesame seeds for a fantastic Asian salad (Andy's specialty!).

Great for the bod: Well, with zero calories, it's a little better for you than mayo on your Subway.

Store it: Cool, dark place. Go ahead and stick it next to your olive oil so you remember to make your own salad dressings : )

Fun stuff: WHOA there's a lot you can do with vinegar. And there is literally a Vinegar Institute to keep you up to speed.

Super simple vinaigrette
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon or so Dijon mustard
1 crushed garlic
1/4 cup chopped green onions
S&P (salt and pepper!)

Mix it up and keep it in a bottle for later.

Meg's Coleslaw

1 bag of broccoli slaw
1/2 cup reduced fat mayo (I always eyeball it...add more if it's dry)
1/4 cup sour cream
Chopped green onion
2 tablespoons distilled white vinegar
1 tablespoon dry mustard or 2 tablespoon wet mustard
2 tsp celery salt
S & P

Mix it up. Add a couple tablespoons if you want a hint of sweetness. Love it.
